Iam always on the run, so sometimes having healthy eating doesn’t happen. And with no time to really eat means I really have no time to extensive meal prep either. Well I have finally found an easy go to recipe that I can prep the beginning of the week and use them as a grab and go breakfast or a pick me up snack. These pumpkin chocolate chip energy bites are not only healthy but they are DELISH!
Pumpkin Chocolate Chip Energy Bites
1/4 cup of honey
1/2 cup of peanut butter
1/4 cup chia seeds
1 1/2 cup of oats
1/2 cup of pumpkin puree
1 tbsp of pumpkin pie spice
1 tbsp vanilla extract
1/2 cup of chocolate chips
Step 1. Mix in bowl Pumpkin puree, honey and peanut butter
Step 2. Add chia seeds, vanilla, and pumpkin pie spice
Mix well
Step 3. Fold in oats and chocolate chips
Step 4. roll into bite sized balls
Step 5. Keep in the fridge so they firm up
Step 6. ENJOY
